Green Scene — Healthy Tips for GREAT Lunches

Sick of making lunches yet?

This week we are going to give you some healthy tips for GREAT lunches! Hopefully you have your stainless steel or at least reusable containers (not plastic baggies or plastic wrap) and stainless steel water bottles.

Here are some of our favourite lunch foods:

  • Chopped up veggies and dip or hummus for protein

  • Salad - but don’t put the dressing on at home because the salad gets soggy! Yuck! Some of our favourite salads include green salad, kale salad, chickpea salad, caesar salad, bean salad, potato salad, pasta salad…..so many yummy salads!

  • Leftovers are another favourite - whatever your family loves to eat just make extra so that they can have it again for lunch (homemade pizza, rice, pasta, meat (roast, steak, chicken etc…) made into sandwiches the next day (tempeh or tofu for our vegetarian and vegan friends)

  • Cheese and crackers - a classic, add some cut apple slices too!

  • Nachos and salsa or hummus and pretzels

Be sure to also eat at least one serving of fruit each day - we like it when the fruit is chopped up with a drop of lemon to keep it from going brown before we get to it and sent with a fork from home - but NO plastic forks please!

We have also decided to just drink water for lunches to cut out the juice box and straw, which cuts down on litter in lunches.

Bookmark some recipes for homemade, healthy granola bars, cookies, and muffins - we try to do some baking on the weekends to make lunches easier.

Another tip is to make a dinner plan for the weeknights so that you have all your ingredients and can plan to use healthy dinner leftovers for lunches!
